Senior Sous Chef

An exciting opportunity has arisen for a talented and motivated Senior Sous Chef to join our client’s well-established, high-volume hotel kitchen. With a proud tradition of warm hospitality and excellent food, their operation is both busy and rewarding – serving up to 350 breakfasts daily, 260 evening covers, and conference & banqueting events for up to 180 guests.

 

They are seeking a hands-on Senior Sous Chef with proven conference and banqueting experience, a strong track record in busy hotel kitchens, and a Level 3 Food Hygiene certificate (or above). This is a senior role, ideal for someone who thrives under pressure and is confident in both leading the team and maintaining the highest culinary and compliance standards.

 

About the Role...

As the Senior Sous, you’ll play a vital part in supporting the Kitchen Manager with all aspects of kitchen operations, ensuring smooth service across breakfast, restaurant dining, and conference & banqueting functions. You’ll lead by example, mentor junior chefs, and deputise for the Kitchen Manager in their absence.

 

Key Responsibilities...

  • Lead kitchen operations in the absence of the Kitchen Manager
  • Ensure consistent food quality, presentation, and portion control across all services
  • Oversee banqueting functions and high-volume service with confidence
  • Maintain and complete all food safety, hygiene and compliance documentation
  • Support menu planning, stock management, and supplier relationships
  • Train, mentor, and motivate the kitchen team
  • Maintain a calm, organised approach in a fast-paced environment

 

About you...

  • Minimum 6–7 years’ experience in a busy hotel kitchen environment
  • Proven banqueting experience (100–180+ covers)
  • Recognised cookery qualification (NVQ Level 3 or equivalent)
  • Level 3 Food Hygiene certificate (essential)
  • Excellent classical cooking skills and knowledge of HACCP and food safety regulations
  • Competence with kitchen audits, compliance paperwork and staff rotas
  • Strong leadership skills with experience supervising and training teams
  • Passion for delivering quality food in high-volume settings
